From charring, grilling and cooking on the coals - it was a joy to create a feasting menu around an open flame.

There were plates of Cornish grass-fed lamb shoulders with a hibiscus-chipotle glaze plus a chicken liver parfait with smoked pasilla de Oaxaca lime relish but the rest of the meal was a vegetable love affair: stunning courgette flowers stuffed with goat’s curd and soft summer herbs, roast beets heaped high on white mole, grilled polenta with garlic greens and charred tomato as well as courgettes with ricotta, hazelnuts and a chilli lime dressing invented by Chef Leo Da Cruz for our menus at Wahaca (think citrus, charred jalapeño, olive oil whizzed into an incredibly light but feisty dressing).The eccentric English weather entailed a rather cool and cloudy start. However, when the the time came to ladle out the cherries poached in mezcal and vanilla, which had been bubbling away in a big old pot on the fire, we were treated to the perfect golden hour. The sweetest ending to a brilliant evening.
