Tommi’s Mexican spice mix
This sweet, smoky, lightly spicy blend of herbs and spices will transform a chilli, be a brilliant rub for chargrilled meat, do wonders with a whole roast cauliflower, and much more besides… Makes 120g (4 small jars).
Ingredients
4 tbsp ground cumin
2 tbsp sweet paprika
2 tbsp hot paprika
1 tsp ground cinnamon
2 tsp oregano
1 ½ tsp salt
2 tsp ground allspice
Zest of 1 lime
2 tbsp fennel seeds
Recipe
Grind all of the ingredients in a spice grinder and jar. That’s it!
